What is the best type of wood used for an acoustic guitar?

spruce? maple? rosewood?
i’m looking at one right now that has quilt maple body and rosewood fretboard, but i’m curious which material is the best

Most people consider the best wood for the back and sides to be Brazilian rosewood (dalbergia nigra). As a result of an import ban in accordance with the C.I.T.E.S. treaty there is no more Brazilian rosewood coming into this – or any other – country. There are some existing stocks but they are scarce and can add as much as $5000 to the cost of a new guitar.

Top wood is a matter of taste but there are several varieties of spruce including Adirondack, Engelmann, and European that are highly prized. Redwood is also a great top wood.

Ebony is generally considered to be the best wood for fretboards and bridges.

I know that this did not help you at all but that’s what you asked for. There are lots of other woods that people like, sometimes even better than the ones I listed. All-koa guitars, for example, can be splendid. Ultimately it comes down to what you like the best.
